Weekly Meal Plan

I’ve got two of my all time favorite meals on the weekly meal plan this week: pork and pineapple fried rice and peanut noodles. Matt is finally finished travelling for work, so I’m excited to cook for two again. (Not that I couldn’t finish off the pineapple fried rice or peanut noodles solo 😉 )

Menu Week 10-23-16 | Mrs Tea & Mr Coffee

Sunday Pork with Pineapple Fried Rice and Egg Drop Soup – This meal is one of our favorite dishes in our house. It’s packed with flavor. It’s got caramelized pineapple, crispy onions and a delicious sauce that ties it all together. The leftovers are also amazingly delicious.

Monday Baked Potato Soup, Pumpkin Cornbread and Roast Broccoli – Baked Potato Soup is so creamy and filling. I love all of the toppings; the cheese, bacon, and green onions. The ingredients in this soup are so simple, but super yummy.

Tuesday – Steak, Broccolini and Buffalo Blue Potatoes – We’ve got to get a couple more grilled meals in before it gets too cold and winter-y here in Kansas. I’m going to try a new side dish recipe, Buffalo Blue Cheese Potatoes. They should be delicious and the perfect pairing to a juicy, grilled steak.

WednesdayPeanut Noodles and Salad – Oh my goodness, I love peanut noodles! Peanut butter is one of my absolute favorite condiments, so if I can sneak it in with some vegetables, it’s even better.

ThursdayBalsamic Pork, Rice and Brussels – I bought 8 pounds of pork shoulder at the grocery store a few weeks ago when it was on sale. I was able to cut it up and freeze half. This easy crockpot recipe will be a great way to use it up.

Weekly Meal Plan

This week is my busy week at work, so it’s going to be a quick and easy meal plan week.

Menu Week 10-2-16 | Mrs Tea & Mr Coffee

Sunday – Out – We went over to a friend’s house for a delicious dinner.

Monday Enchilada Orzo with Chicken & Homemade Tortilla Chips – This is a super easy meal, because you make it in the crockpot. I’m going to add rotisserie chicken to make this a little more hearty.

Tuesday – White Chicken Chili, Cornbread & Broccolini – White chicken chili only requires minimal ingredients and time. It’s a delicious one pan meal and great for busy weeknights.

WednesdaySheet Pan Asian Stir Fry – I love Asian dishes and love the idea of a one pan dish. And just look at those rainbow of colors! Roast vegetables are my favorite, so this will be an all around home run.

Thursday – Mac & Cheese with Green Beans – I love Annie’s GF mac & cheese. It’s easy to make for a quick dinner and I love to pair it with a big serving of vegetables.

Weekly Meal Plan

We finally have some fall weather in Kansas this week, and it makes me soooo happy! Here’s what I’m making this week.

Menu Week 9-25-16 | Mrs Tea & Mr Coffee


Sunday – Bacon Wrapped Pork, Wild Rice, Green Beans & Fall Salad – This pork is wrapped in bacon and marinated in soy sauce and a few other things all day. This and the rice are some of Matt’s mom’s specialties. I also made this quintessential fall salad. It has apples, feta, red onions and delicious smokey-sweet walnuts.

Monday – Family Dinner

Tuesday – Grilled Cheese, Tomato Soup & Balsamic Brussels – I think grilled cheese and tomato soup pop up on my meal plans 2 out of 3 times here on Mrs Tea! I love this combo. I’m going to try a new 20 minute tomato soup, which makes it perfect for a week night meal.

Wednesday – Chicken with Teriyaki Quinoa & Roast Broccoli – I got a box of teriyaki quinoa from Aldi and have some rotisserie chicken to go with it. I love roast broccoli and this “crack” broccoli looks so good!

ThursdayParmesan Noodles with Chicken & Peas – This is an easy weeknight meal. I love noodles and these parmesan noodles look so creamy and yummy. I’m going to add some rotisserie chicken and peas.

Friday – Spinach & Artichoke Enchiladas – This is a delicious from scratch meal, but don’t let that scare you away. The homemade enchilada sauce is so much better than the store bought kind and it’s so easy to make. I love adding some ground turkey to these enchiladas to make them a little more hearty. These also make great leftovers!

Weekly Meal Plan

Wow, my life has been crazy lately, which puts meal planning on the back burner. I’m hoping that fall will be a little bit calmer! Here is what is on the menu for this week!

Menu Week 9-18-16 | Mrs Tea & Mr Coffee

Sunday French Onion Chicken and Salad – This was so good! All of the wonderful flavors of French Onion Soup, with chicken and totally bread-dipping-delicious. Totally hearty and a great Sunday night dinner.

Monday – Flank Steak with Peanut Sauce,Thai Brussels & Fried Rice – This peanut sauce is one of my favorite accompaniment to anything grilled. We have this multiple times a summer, and wanted to get it in one last time before grilling season is over.

Tuesday – Cheesy Tortilla with Egg & Black Beans – This is an easy dinner that’s meatless and will help use up my leftovers. I love making homemade black beans and have some in my fridge that I need to eat up. They are super easy and you can make them in the crockpot! I like to use dry black beans and soak them overnight. I drain and put them in the crockpot with chili powder, cumin, red onion, rotel, garlic and vegetable broth. Let this sit all day on low, and you’ve got perfectly cooked homemade black beans. These are delicious as a side dish or mixed into tacos.

Wednesday – Sweet Potato Turkey Chili & Green Beans – I’m so ready for fall and all of the fall food and flavors that goes with it. I love this chili. It’s smoky and slightly sweet. It’s really easy to put together and great leftover for lunches.

Thursday – Out – Peanut Butter S’mores – I’m making this end of summer/beginning of fall dessert to take over to a friend’s house for dinner. What could be bad about peanut butter + graham crackers + chocolate + marshmallows? Not a thing!

Friday – White Chicken Chili – This is an easy stovetop “chili” that has chicken, white beans, corn, tomatoes and some seasonings. It’s one of our favorite chili’s!

Weekly Meal Plan

Hey guys! It’s been soooooo long. I’m starting to feel inspired again and getting back into a little more structure in my life. Which means, making myself put together weekly meal plans. Here is what is on the menu for this week! Also, I got a new menu board which will make it a little bit easier to get my new plans down.

Menu Week 6-5-16 | Mrs Tea & Mr Coffee

Sunday – Baked Lemon Chicken, Roasted Asparagus, Salad and Quinoa Brown Rice – This is kind of a long one, but sometimes on Sundays, it’s nice to make a little bit “fancier” of a dinner. But it’s really not that fancy at all :). This baked chicken recipe is honestly one of the best tasting baked chicken recipes I’ve ever made. It’s so juicy and has so much flavor, and is super easy. I would compare it to rotisserie chicken, but since you’re making it at home, you know all of the ingredients that go into it! I made a big batch of this to have for leftovers to put in my pasta later this week. My new favorite salad dressing is this recipe that has apple cider vinegar, olive oil, garlic, s&p and a little honey. So good!

Monday – Taco Salad – This is a really easy week night meal. I like to brown up some ground turkey and use homemade taco seasoning to season it. I make a double batch of the seasoning and keep it on hand. I just do a tablespoon of chili powder, oregano, paprika, onion powder, garlic powder, cumin and a teaspoon of kosher salt. It is so much better than the store bought kind! I serve this over a big bowl of lettuce, add in some bell peppers, green onions, and corn. I dress it with salsa and just a little bit of ranch. Yum!

TuesdayCashew Sauce over Pasta & Roast Broccoli – I’m so excited to try this recipe. I love the idea of using cashews as a creamy sauce for pasta. I’m going to add in some of the roast chicken that I made earlier in the week, some easy caramelized red onions, and I’m going to use spinach instead of kale, since that’s what I have on hand.

Wednesday – Chicken Fingers, Green Beans & Sweet Potatoes – This is one of my favorite meals to make when Matt travels! I call it my kid meal. I try to make it healthy by having some vegetables and will make the sweet potato fries from scratch. It’s easy to make them at home and they are delicious.

ThursdayCashew Chicken – Asian inspired food is probably one of my favorite types of food. I love all stir fries and fried rice and the sauce. Yum. And this chicken dish looks so easy and delicious. I love that it’s packed with veggies.

Friday – Out

Saturday – Grilled Chicken Teriyaki – I have an easy and delicious marinade recipe that my mom always used growing up. It’s soy sauce based and is super yummy. I love to add pineapple slices and a slice of provolone or havarti cheese.
