Wow, I can’t believe how beautiful it was here in Kansas City this weekend. This is the first week that we broke out our new grill and, man, it was overdue!. Here is the new menu for the week.
Sunday – Teriyaki Chicken Rice Bowls – This dish is a great way to get a huge serving of vegetables that are super delicious. The teriyaki sauce is sweet and sour and great on grilled chicken and roasted vegetables.
Monday – Family Dinner
Tuesday – Quiche & Broccolini – My favorite quiche is very simple, great for breakfast or dinner. I like to fry some bacon and an onion, combine eggs, swiss and cream cheese in a pie crust and bake it up, and dinner is served. I love broccolini, which is simply baby broccoli. It’s more tender than regular broccoli and is nice for something different.
Wednesday – Lime Chicken & Green Beans – I’m going to use some chicken thighs for this and sear them on the stove top before putting them in the oven. This is my new favorite way to make chicken. It’s so moist and very tasty.
Thursday – Turkey Burgers with Gorgonzola & Siracha Slaw & New Potatoes with Onions & Green Beans – These aren’t your every day turkey burgers, they are piled high with deliciousness. The creamy gorgonzola is offset by the spicy siracha slaw. And the great thing is that you don’t really even need a bun for this! I love to cut up new potatoes, into thin disks, some onions and green beans and saute them up in skillet. Quick and easy side dish for any meal.
Friday – Greek Quesadillas – This is a nice meatless meal and only takes 15 minutes from start to finish. I like to use spinach, feta, parmesan, mozzarella, red peppers, and red onions. Yum!
Saturday – Out
