Here’s the last meal plan for the month of February.
Sunday – Family Dinner
Monday – Enchilada Salad with Crispy Sweet Potatoes – If this recipe turns out I’ll be sure to post it on the blog. I put some chicken in the crockpot with some enchilada sauce and put it over salad. I spiralized some sweet potatoes and got them crispy and put them on top.
Tuesday – Sweet & Sour Pork with Brown Rice – I get stuck in a chicken rut sometimes, so this pork stir fry will be a nice break. It looks really easy and the sauce looks delicious.
Wednesday – Thai Peanut Stir Fry – I love this dish. It’s packed with vegetables and the peanut sauce brings it all together.
Thursday – Orange Chicken with Green Beans – I can’t wait to try this dish. Oranges are on super sale right now, so this is a great way to use them. This looks so easy and healthy!
Friday – Greek Quesadillas – This is a nice meatless meal and only takes 15 minutes from start to finish. I like to use spinach, feta, parmesan, mozzarella, red peppers, and red onions. Yum!
