Weekly Meal Plan

Menu Week 9-27-15 | Mrs Tea & Mr Coffee

This is my 20th Meal Plan Post! I hope you have been enjoying these posts and a peek into my weekly life.

Sunday – Kung Pao Chicken – If you’ve been following my meal plans for some time, you’ll know that this dish has been on repeat lately. Again, super easy, and delicious! (Things came up last week, so this got bumped up to the menu this week)

Monday – Family Dinner

Tuesday – Leek and Potato Soup with Pumpkin Cornbread – This is a creamy, dreamy potato soup with leeks and pumpkin cornbread is the perfect fall pairing.

Wednesday – Chicken Fingers, Sweet Potato Fries and Green Beans – This is what I call my kid meal. I love Applegate gluten free chicken fingers. They remind me of childhood, but I don’t have to feel too bad about eating them.

Thursday – Sweet Potato Noodles with Sage Pesto and Brown Butter – I’ll share this delicious recipe soon!

Friday – Chicken Broccoli Braid – Don’t mind these horrible pictures, this dish is packed with flavor and is 100% comfort food. Use crescent rolls for and easy non-gluten free option, or whip up this easy crust.

SaturdayTurkey Taco Chili Mac – This is a delicious fusion of chili and mac and cheese. It’s loaded with vegetables, protein and fiber from the beans. This is another quintessential fall dish.

Gouda Cheese Chips

Who is ready for some football? These Gouda Cheese Chips are the perfect pairing for any football game, whether you’re there for the sports or just the snacks 🙂

These chips are special because they are sweet potato chips. I love the sweetness that the chips provide against the tang of the luscious cheese sauce. I used some chips I picked up at the store, but if you’re feeling really ambitious you could make some homemade chips. Either way, these chips will get gobbled up super fast!

This gouda sauce is the perfect complement to the bacon and sweet potato chips. The sauce is gluten free and dairy free and you would never know it! You can’t go wrong with sweet potato chips covered in cheese and bacon.

Gouda Cheese Chips

Ingredients
  • 5 slices bacon, diced, cooked
  • 3 green onions, thinly sliced
  • 1 tablespoon butter, unsalted
  • 1 tablespoon brown rice flour
  • ½ cup almond milk, warm
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 5 ounces smoked gouda cheese, shredded
Instructions
  1. Preheat the oven to 350 degrees and line a baking sheet with foil.
  2. Spread out a few handfuls of sweet potato chips onto the baking sheet.
  3. In a small pot, melt the butter over medium heat. Once the butter is melted, whisk in the flour. Continue to whisk and heat for about a minute. Remove from the heat and slowly whisk in the warm milk, removing any clumps. Bring the mixture to a simmer, until thick, 1 to 2 minutes. Add in the cheese and whisk in the spices until incorporated.
  4. Pour the cheese sauce over the chips and top with the bacon. Heat in the oven for 7 to 10 minutes, until the chips are heated. Once removed from the oven top with green onions.

Weekly Meal Plan

Menu Week 9-20-15 | Mrs Tea & Mr Coffee

Sunday One Pot Autumn Roast Chicken – This dish is everything great about fall in one pot. I was craving comfort food and this meal brought it. The delicious rice and pasta combination with the cooked carrots and sage, hit the spot.

Monday – Family Dinner

Tuesday – Chicken and Black Bean Nachos – This week is going to be hectic, so I wanted some really quick dishes to add to my meal plan. I have some cooked crockpot chicken that I made a few weeks back and has been chillin’ (literally, :)) in the freezer. Same goes for these black beans.

Wednesday – Sweet Potato and Sausage Frittata – I made a frittata on the stove top/oven this weekend and the leftovers are dinner!

ThursdayKung Pao Chicken – If you’ve been following my meal plans for some time, you’ll know that this dish has been on repeat lately. Again, super easy, and delicious!

Friday – We are headed to Michigan for a wedding this weekend! Can’t wait to catch up with family.

Weekly Meal Plan

Menu Week 9-6-15 | Mrs Tea & Mr Coffee

Monday Kung Pao Fried Rice – this is a dish I posted a while back. It is bursting with flavor. It is loaded with tons of vegetables and whole grains. This dish makes a ton and is great leftover!

TuesdayTurkey Sweet Potato Chili – This chili is so easy and only has a few ingredients. It’s sweet from the potatoes and spicy from the taco seasoning, which makes a knockout combination. I know it’s not quite fall yet, but I couldn’t wait to make this dish.

WednesdayChicken and Broccoli Skillet Bake – I can’t wait to try this dish. It is comfort food at it’s best. I got a spiralizer for my birthday and I am so excited to try it out!

Thursday – Belated birthday dinner out with a girlfriend

Friday – We are headed to the lake this weekend to spend some time with our dear college friends!

Saturday – Honey Mustard Pork Chops, Grilled Corn & Potaotes – This is my night to cook at the lake. I’m going to grill some pork chops with this delicious marinade again.

So excited for a four day week 🙂

Peanut Butter Dark Chocolate Doughnuts (Gluten Free!)

Well this is my birthday week (Thursday, to be exact) and growing up my parents always did an extra good job of making me feel special and loved on my birthday. Also, my birthday is always around Labor Day and so it feels extra special because of the day off! And in the town I grew up in there was always this huge festival with lots of activities, which just made for a big party, like all of the hullabaloo was for me 🙂 So, growing up birthdays were always awesome.

Now, the older I get, I’m not as excited about my birthday. You don’t have anyone to make you a special birthday dinner or cake, well, because you are the one who makes the dinners and the cakes.

So this year I decided to buck up and just go ahead and make myself a homemade, gluten free sweet to ring in my birthday with style!

Enter these gluten free peanut butter doughnuts, with peanut butter dark chocolate glaze. Now, this is not my original recipe, but is from the amazing Edible Perspective. I’ve had my eye on this for a while and decided this was the perfect occasion to make something a little special.

Boy I was so pleased with how these doughnuts turned out! In my family, we call any doughnut that you purchase at a doughnut shop or gas station, etc. a lead bomb. They taste so good going down, but the sugary doughnut just really slows you down, and feels like “lead” in your tummy! These homemade, baked, delicious doughnuts are the opposite of those grocery store lead bombs. They are light and have a cake-like texture and are just the perfect amount of sweet.

These doughnuts are the perfect combination of peanut butter and chocolate. I will say they aren’t too rich and aren’t overwhelmingly peanut butter-y. And the chocolate topping, really seals the deal!

Peanut Butter Dark Chocolate Doughnuts (Gluten Free!)

Ingredients
  • ½ cup oat flour (use gluten free oats, ground in a blender)
  • ½ cup brown rice flour
  • 2 tablespoons coconut flour
  • ¼ cup creamy peanut butter, melted
  • ⅓ cup sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon
  • 2 large eggs
  • 2 tablespoons unsweetened applesauce
  • ½ cup unsweetened almond milk
  • 2 teaspoons vanilla
  • ⅓ cup peanut butter chips
  • ⅔ cup dark chocolate chips
  • 1 tablespoons creamy peanut butter
Instructions
  1. Preheat your oven to 350 degrees.
  2. Mix together the flours, sugar, salt, baking powder, and cinnamon in a large bowl.
  3. In another bowl mix together the eggs, applesauce, milk, and vanilla.
  4. Whisk in the melted peanut butter to the egg mixture.
  5. Stir the egg mixture into the flour mixture. Stir until combined.
  6. Fold in the peanut butter chips.
  7. Using a Ziploc bag, with a corner cutout, pipe the dough into a greased doughnut pan.
  8. Bake for 16 to 20 minutes. Use a toothpick to make sure the doughnuts are done. Make sure that it isn’t too wet, but you don’t want it too dry.
  9. Let the doughnuts cool in the pan for a few minutes, then flip onto a cooling rack.
  10. Once cooled, frost away!
  11. For the Frosting: Melt the dark chocolate chips and peanut butter in a microwave safe bowl, in 20 second increments, stirring in between.
  12. Dip the doughnuts individually in the chocolate. Place on a cookie sheet and place in the freezer for 20 minutes to set.
